Desserts That Even the Legendary Stevo Karapandža Couldn't Resist

The creativity behind his desserts leaves a lasting impression, making him one of the first names that comes to mind when speaking about modern pastry art in the region. Trained by some of the industry's finest professionals, he has also earned the admiration of one of the Balkans' most celebrated chefs. His creations delighted the palate of renowned chef Stevo Karapandža, with whom he once shared the kitchen.

Through his innovative approach, young pastry chef Stefan Ilić from Banja Luka invites guests into a world where culinary craftsmanship meets art.

He studied in Banja Luka and Belgrade before continuing his education and professional development in Greece and Zagreb, learning from internationally acclaimed chefs while working in luxury hotels and fine-dining restaurants.

Driven by a passion for contemporary pastry making, Ilić returned to his hometown, where he founded Atelier 51. His vision was to bring creativity and innovation to the local dessert scene by presenting sweets in an entirely new way. He dedicated countless hours to studying, attending online masterclasses, participating in lectures by the world's leading pastry chefs, and constantly creating and refining new desserts.

Today, his signature creation is a pear-shaped dessert crafted with remarkable precision, making it almost impossible to distinguish it from a real pear at first glance.

"There have been many amusing moments when guests genuinely believed they had been served an actual pear instead of a dessert and thought it was a joke. In reality, it's one of the most technically demanding pastries we make," Ilić explains.

One of the highlights of his career was working alongside the legendary chef Stevo Karapandža. While Karapandža was responsible for the savoury menu, Stefan was entrusted with preparing the desserts.

"During his stay in Banja Luka, we cooked together, talked a lot, and he tasted my desserts. He was genuinely impressed. His compliments meant more to me than I can describe and gave me even greater motivation to keep improving and developing my work," Ilić recalls.

The undisputed queen of his ingredients is chocolate, but only the finest quality.

"I enjoy experimenting with many flavour combinations. One of my favourites is coconut, pineapple and Malibu rum, while another combines vanilla, hazelnut praline and mascarpone. In every dessert, however, beautiful, high-quality chocolate is the essential component. That's why I constantly seek out world-renowned chocolate producers and try to bring their products to our market. My goal is to give people here the opportunity to experience the richness and diversity of exceptional chocolate through my desserts," Ilić told HEDONIST Magazine.
